Zucchini Sweet Potato Fritters.

Some people nest before baby comes. 🧺 Some clean 🧼 Some do all sorts of projects ✨

Me? I am stock piling food 😅🍽 and my brain is coming up with recipes like crazy and I dont know where all this creativity is coming from but I AM INTO IT!

My plan is just to have options for when baby gets here. I am confident that these will just help me be a little more calm around meal times or when I am hungry. I am not doing this to control food intake, instead just to preemptively manage stress (if that is even possible as a new mom!) even just a little bit.

SO that said, this is a delish veggie/carb combo that could be a great side dish or even snack! My husband snuck one already and used the word “MAGIC” to describe them. That alone should be enough for you to try.

SO LETS DO IT.

Here is a tiktok I made walking you through what it looks like to make them and recipe is below!

Ingredients:

  • 1 large sweet potato, mashed (I took off skin, poked holes in it and microwaved mine for 3 minutes took out to rotate and back in for 2-3 more minutes and then mashed!)

  • 1 box thawed zucchini spirals from Trader Joes OR. 2-3 grated zucchini

  • 3 eggs

  • 1/4 cup bread crumbs

  • 1/2 cup whole wheat flour

  • garlic + herb seasoning, to your preference

  • coconut oil for pan

Directions:

  1. Prep zucchini by making sure you remove as much moisture as possible from them, I thawed frozen and then removed water once fully flawed with spatula (watch video!) and be sure your sweet potato is mashed and then add both to bowl.

  2. Add eggs, breadcrumbs, flour and seasoning and mix very well to combine

  3. Add coconut oil to a hot pan and place a nice sized portion of that mixture on to the hot pan

  4. Cook 2-3 mins per side until nice and golden brown

  5. IF FREEZING: Let cool completely first and then add to an air tight tupperware container. Thaw in fridge when ready to eat!
