Best Breakfast Taco Recipe

As a dietitian who sees clients 1:1, I get asked almost daily how to make breakfast more exciting! I’ve found that most people, including myself, make breakfast on autopilot but at some point we all want to switch things up.

This recipe took me 25 minutes to make (and film) and has been a hit! You can thank me later ;)

Ingredients: 

  • 2 small tortillas (I used corn)

  • 2 eggs

  • 1/4 cup drained canned black beans

  • 1/2 Avocado

  • 1/4 lemon

  • Salt and pepper to taste 

  • Garlic powder to taste

  • Crushed red pepper to taste

  • Pico de Gallo to taste (I used the spicy premade version from Trader Joes)

  • Trader Joes Smoky and hot chili powder(or another spicy chili powder) to taste 

    Note: The amounts of these ingredients are suggestions! You can make this however you want :)

Directions:

  1. In a small bowl, mix 2 eggs, a splash of water or milk, salt, pepper, crushed red pepper, chili powder, black beans, and garlic powder.

  2. Scramble in a skillet on low heat. 

  3. In a separate small bowl, or in the shell of the avocado, mix avocado, juice from the lemon, and salt. 

  4. Once eggs are done cooking, set aside and warm the tortillas on the skillet. 

  5. Once tortillas are warmed to your liking, assemble tacos. Spread avocado on the tortilla, add cooked egg and black bean mixture, and pico de gallo to taste. Buen provecho!
