Air Fryer Brunch Toast Recipe

I made this toast before heading to the airpot, after teaching yoga, and it kept me full and satisfied for SO many hours (no one wants to be hangry in the airport). This is a delicious breakfast or brunch that comes together so quickly and will make you feel amazing. Trust me- you’re gonna love this! 

Ingredients: 

  • 1-2 slices of sourdough bread (I used whole wheat sourdough) 

  • 1-2 eggs (depending on the # of slices of bread you use!)

  • 1-2 slices cheddar cheese

  • 1/2 Avocado

  • 1/4 cup black beans

  • Pico de Gallo to taste 

  • 1/4 lemon 

  • Salt and pepper to taste 

  • Garlic powder to taste

  • Crushed red pepper to taste

Directions: 

  1. Begin heating the pan you’ll use to cook the eggs. 

  2. In a small bowl, add avocado, juice from the lemon, salt, pepper, garlic powder, crushed red pepper. Gently mix in black beans. Set aside

  3. Begin cooking your eggs. I fried mine, but you can prepare them however you like! 

  4. Add cheese to your slices of toast. At this point I air fried mine for 1.5 min at 400 degrees, but if you prefer you can toast in a pan or a toaster. The cheese should be melted for best results!

  5. Once eggs are done, remove from heat. Place toast on a plate and add avocado mixture. Then add eggs and Pico de Gallo to taste. Enjoy!
