Caprese White Bean Salad

A great recipe for a quick meal prep, dinner, to take to a late summer gathering or for whatever your needs are. Packed with fiber and protein, healthy fats and sure to hit the spot. This can be thrown over pasta, romaine, with toast points or eaten as it is!

Ingredients:

  • 16 oz can of Cannellini or White Beans

  • 8 oz of cherry mozzarella

  • 1 lb of halved cherry tomatoes (or tomato of choice)

  • ½ cup of basil (roughly chopped)

  • Balsamic reduction or balsamic vinegar to drizzle

Dressing:

  • 1 garlic clove minced

  • ¼ cup of olive oil

  • 1 ½  tablespoon of white wine vinegar

  • Salt and pepper to taste

  • ½ tablespoon of oregano or italian seasoning

Directions:

  • Mix dressing ingredients in a jar or bowl to combine

  • Half tomatoes and chop basil 

  • Add basil, tomatoes, mozzarella and beans (drained and rinsed) into a bowl

  • Mix dressing into salad ingredients 

  • Transfer to a serving bowl and drizzle with balsamic

Best enjoyed fresh or within 1-2 days of preparation. Enjoy!
