Trader Joe’s Walking Taco Recipe

Shout out to all my 80s and 90s kids, this recipe is for you! I was working on planning quick weeknight meals last week and remembered a killer walking taco my husband and I had this summer at a concert, talk about a taste of nostalgia. I thought I’d give this elevated walking taco a try, this is 10/10 husband-approved.

Ingredients:

  • 1 bag of Organic Corn Chip Dippers (so, salty and delicious, I personally think Fritos are overrated but these are DELISH)

  • Meatless Grounds (or ground meat of choice)

  • Black Beans (½-⅔ of a cup)

  • Onion (about ¼ cup)

  • Bell Pepper (about ¼ cup)

  • Shredded lettuce

  • Shredded Mexican Cheese

  • Taco Seasoning

  • Jalapeno (optional)

  • Guacasalsa (this stuff is INCREDIBLE!)  or other salsa 

  • Sour Cream

Directions:

  • Prepare the meatless grounds according to the package

  • Chop your desired amount of bell pepper and onion, and saute in a pan with oil, salt, and pepper.

  • Add black beans and meatless grounds to a pan with peppers and onions, and add taco seasoning until covered and heated through.

Build Walking Taco: (either in the corn chip bag or a bowl)

  • Choose your desired amount of corn chips (I used about ⅓ bag per serving)

  • Add the mixture of meatless grounds, black beans, and peppers/onions

  • Pour the desired amount of Guacasalsa over mixture 

  • Add shredded cheese, shredded lettuce, and sour cream!
