Honey Orange Salmon & Rice Bowl

February is American Heart Month, and as a registered dietitian, I want to share my secret heart-healthy tip with you: consider adding Florida Orange Juice to your daily routine!

Most people know that 100% orange juice is amazing for helping support our immune system, but many are surprised to know nutrients found in 100% orange juice play a role in maintaining a healthy heart too. But, you don’t just have to drink it to get the benefits - I love the concept of thinking beyond the drink and using my Florida Orange Juice in creative ways like as a dressing & marinade for this super simple meal. 

100% orange juice has been shown in clinical studies to:

  • reduce total cholesterol 

  • reduce LDL cholesterol (the “bad” cholesterol) 

  • reduce blood pressure 

  • reduce or not affect triglyceride levels 

You absolutely can enjoy your Florida Orange Juice in a cup, but using this fridge staple in a recipe like this one also adds so much flavor with no added sugar, and it’s sodium free and cholesterol free too - who can beat that!

Honey Orange Salmon & Rice Bowl:

Dressing/Marinade Recipe: 

  • ½ cup Florida Orange Juice

  • 2-3 tbsp red wine vinegar

  • 2 tsp honey

  • Garlic to taste

  • 1 tbsp Dijon mustard

  • ¼ cup EVOO 

  • 2 tbsp minced shallots

  • Salt, pepper

For the Salmon:

Place raw salmon filets on a baking dish and cover with dressing/marinade for as long as you can! An hour would be great but whatever is possible for you. Then depending on size of your fish bake at 400 for 18-25 mins until cooked through.

Build the Bowl:

You can customize this to your preference, I went for lots of color and minimal effort. In a bowl place mixed greens, sliced cucumbers, peppers, radishes and carrots. Add jasmine rice and top with cooked salmon. Add your honey orange dressing on top and enjoy! You can also add toppings like pumpkin seeds, nuts, cheese and avocado!

In addition to the potential heart health benefits, an 8-ounce serving of 100% orange juice is an excellent source of vitamin C, a good source of potassium, folate, and thiamin, and can help contribute to total fruit intake.
