Chocolate Gingerbread Energy Bites Recipe

These energy bites are a great way to get yourself into the holiday season! No baking required!

As a busy college student, energy bites are a major staple food for me! They come together quickly, freeze well, and are VERY customizable. Packed with fiber and vitamin A, these energy bites are a tasty, no-bake, holiday treat for the whole family.

Tips: 

  • If you have a tub of oatmeal at home, you can make your own oat flour by pulsing the oats into a blender until you reach a powdery texture. Both old fashioned oats and quick oats will work.

  • Additionally, you can use whatever nut butter you prefer for this recipe. I used almond butter!

  • If you’re looking to get even more fiber from these energy bites, you could add ¾ cup of chia seeds to the mix.

Chocolate Gingerbread Energy Bites
Ingredients:

  • 2 cups oat flour

  • ¼ cup cocoa powder

  • 3 tbsp gingerbread spice mix

  • 1 tbsp cinnamon 

  • ½ tsp salt

  • 1 cup nut butter

  • 1 cup pumpkin puree

  • ½ cup maple syrup 

  • ¼ cup + 2 tbsp molasses

  • 1 tbsp vanilla extract

  • Holiday sprinkles (optional)


Directions:

  1. Add the oat flour, cocoa powder, gingerbread spice mix, cinnamon, and salt, into a large bowl. Mix well.

  2. Add the nut butter, pumpkin puree, molasses, maple syrup, and vanilla extract to the dry ingredients. Mix until combined.

  3. Refrigerate the mixture for an hour.

  4. Line a baking sheet with wax paper. 

  5. In a small bowl, add the holiday sprinkles.

  6. Using a spoon, scoop out about 1 tablespoon of dough and roll it into a ball. 

  7. Lightly press the dough ball into the holiday sprinkles. Set the dough ball onto the baking sheet. Repeat until all the dough is used

  8. Store in an airtight container in the fridge. Enjoy!

Note: these last for up to 5 days in the refrigerator and 2 months in the freezer!
