High Energy Oatmeal Chocolate Cookies.

Truly, I have just come to terms with the fact that this is my avoidance mechanism LOL. I could be reading baby books, sleep books, watching youtube videos on how to swaddle and breast feed all the things. BUT INSTEAD, I am cooking and baking up a storm. So at 38 weeks and 1 day, I made 2 batches of the HSH Meatballs - one for the week and one for the freezer, and then took the HSH Energy Bites recipe and turned them into super high energy cookies.

I call them high energy cookies because they are truly PACKED. I have no idea, per usual, what the calories, carbs, protein and all the deets are of these but what I do know is they are full of nutrients, protein, fiber, carbs and FUEL - which we all need always, but post partum, each bite is going to count even more so I am confident these will come in handy!

Ingredients:

  • 1 cup (dry) rolled oats

  • 2/3 cup unsweetened coconut flakes

  • 1/2 cup natural peanut butter (or almond or sunflower seed butter)

  • 1/2 cup ground flax or chia seed

  • ½ cup pumpkin seeds (or sunflower seeds)

  • 3/4 cup dark chocolate chips

  • 1/2 cup honey or maple syrup

  • 1-2 scoops unflavored whey protein powder (I use UP2U protein)

  • 1 /2 cup dried edamame (I used seapoint farms)

  • 2 eggs

Directions:

  1. Pre-heat oven to 350 degrees

  2. Stir all ingredients together in a medium bowl until thoroughly mixed. Best to add dry first, then wet ingredients.

    PRO TIP: Heat up the peanut butter and the honey before mixing in!

  3. Grease a baking tray and create at least 12 cookies, spaced well on baking tray.

  4. Bake for ~15 minutes

  5. Let cool before you freeze if freezing!

  6. Recommend thawing in the fridge when ready to eat!
