Banana Chocolate Chip Oat Muffins

I made a batch of these and immediately regretted not doubling it.

If you make these and plan to freeze like I did, I highly recommend doubling up BECAUSE THEY ARE AMAZING.

I will waste no time and just provide the recipe. I do NOT have the “macros” or nutrition facts for these but they are full of fiber, protein, nutrients and deliciousness.

I plan to use as snacks or quick meals when baby gets here (SO SOON). I would store no matter what in fridge if you don’t plan to freeze!

INGREDIENTS:

  • 3 bananas, mashed

  • 2 eggs

  • 2 - 4 oz. unsweetened apple sauce cups (OR 8oz apple sauce!)

  • 1/3 cup honey (can also try maple syrup, or sugar of any type!)

  • 1 cup oats

  • 1/2 cup flour (i used brown rice flour)

  • 1 tsp baking powder

  • 1/2 cup chia seeds

  • splash of milk, as needed

  • protein powder: optional - I used a 1/2 cup of UP2U Unflavored whey protein powder

  • pinch of salt

  • chocolate chips, as many as you like!

DIRECTIONS:

  • Preheat oven to 375

  • Grab a muffin tray

  • Mash bananas and then add wet ingredients (except milk) to bowl and mix: applesauce, eggs, honey, bananas mix together

  • Add in oats, flour, baking powder, chia, protein powder and salt and mix well

  • Add in chocolate chips and mix again!

  • If the batter seems thick - add a splash of milk too!

  • Pour evenly into muffin tray (12 cups)

  • Bake for 20-25 mins depending on your oven.

  • EAT UP!
