Peanut Butter Salad.

Spicy, Crunchy, Peanut Buttery Cabbage Salad

Peanut butter is my favorite food.

This is a fact.

Peanut butter as a dressing is life changing.

Also a fact.

I will not bore you with more words but get right to the recipe and just tell you, you must try this!

When I really don't feel like cooking, this is my go-to. It is easy, light, fresh, delicious and clean. Switch up your proteins and try adding in new veggies each time and it always tastes new.

Spicy & Crunchy Peanut Cabbage Salad

Sauce:

  • 2 Tbsp peanut powder (PBFit or PB2 work well)

  • 1 Tbsp natural peanut butter

  • 1-2 Tbsp water

  • 2-Tbsp citrus juice (I love this with pineapple or orange juice)

  • ½ tsp lite soy sauce (or liquid aminos or coconut aminos)

  • 1 tsp honey

  • 1 Tbsp rice wine vinegar

  • Garlic (crushed) preference

  • Siracha or Frank’s Red Hot – preference

  • ½ tsp Grated Ginger

Mix together and adjust ingredients based on your taste preference. If sauce is too thick, you may add in 1 more tablespoon of juice and one more tablespoon of water, or one or the other.

If you do not have peanut powder you can of course simply use real peanut butter, and I suggest about 2 tablespoons total.

For the “salad” base there are a few options – the easiest…buy a bag of “broccoli slaw” at your local grocery store and fill a bowl.

Or you can cut up red cabbage, green cabbage, some snow peas and some shaved carrots. Really anything you have in your fridge can work.

From there you can add in some sliced avocado, cucumbers, diced peppers, red onions and even a tablespoon or 2 of craisins. Like I said, mix and match here.

For your protein – you can choose from, toasted peanuts or cashews, grilled chicken breast, grilled shrimp or baked tofu. I have tried all options and all are amazing. OR again, mix and match these options to find your sweet spot.
