HSH's Famous Energy Bites

YUP. I SAID IT. THEY ARE FAMOUS.

Wanna know why?

Because I have never done an event without them, and better yet NEVER had a complaint about them!

They are so easy to make.

So customizable.

You can customize them for pre workout - leave out the protein.

Post workout - add a high quality whey protein (and better yet, make it unflavored so no one will know!)

Injury recovery - add maybe some extra power seeds like chia, flax, basil seeds (my new fave) for added fiber PLUS protein to speed up that healing process.

Make them cookies - bake them for 10 mins or less and they harden then smush down and they are little energy cookies.

Literally the perfect snack for any and every occasion, but don’t take my word for it. They are so simple to make - just try them!

INGREDIENTS:                                                                                                 

  • ·       1 cup (dry) rolled oats

    ·       2/3 cup unsweetened coconut flakes

    ·       1/2 cup natural peanut butter (or almond or sunflower seed butter)

    ·       1/2 cup ground flax or chia seed (or a blend of both or basil seeds)

    ·       ½ cup pumpkin seeds (or sunflower seeds)

    ·       1/2 cup dark chocolate chips

    ·       1/3 cup honey

    ·       1-2 scoops unflavored whey protein powder (I use UP2U )

    ·       1 teaspoon vanilla extract

DIRECTIONS:

1.      Stir all ingredients together in a medium bowl until thoroughly mixed. Best to add dry first, then wet ingredients.

PRO TIP: Heat up the peanut butter and the honey before mixing in!

2.      Cover and let chill in the refrigerator for half an hour.

3.      Once chilled, roll into bites – note if batter doesn’t combine well – add in a little water and wet your hands prior to rolling dough into balls

4.      Store in an airtight container and keep refrigerated for up to 1 week.

5.      Makes about 15-20 bites.
