Chocolate, Pumpkin Oatmeal Squares.

A post that needs no build up or introduction because the TITLE SAYS IT ALL.

Three of our favorite ingredients, baked to perfection in your new favorite fall dish.

Chocolate, pumpkin oatmeal squares are here to bring happiness into your fall in so many delicious ways. Our very own, Lauren Smith came up with this recipe and we cannot stop drooling over it.

INGREDIENTS:

  • 2 cups quick oats

  • 1/2 tsp cinnamon

  • 1/2 tsp pumpkin pie spice (or more cinnamon)

  • 1 pinch salt

  • 3 egg whites

  • 1/3 cup maple syrup

  • 3 tbsp almond (or peanut) butter

  • 1/3 cup milk of choice

  • 1 tsp vanilla extract

  • 1 can pumpkin purée

  • Add In Ideas:

  • 1/4 cup chocolate chips + 1/4 cup chopped medjool dates (most folded in but saved a few for topping). You can use nuts, dried fruit, chia seeds, etc!

DIRECTIONS:

  • Preheat oven to 380F

  • Grease square baking pan (I used coconut oil)

  • Mix all the dry ingredients together in large bowl.

  • Add in wet ingredients and combine.

  • Fold in any add ins you are using.

  • Spread evenly into pan, and top with additional chocolate chips or toppings of choice.

  • Bake for 25 minutes and then let it cool for atleast 20 minutes!

Keeps in fridge for 1 week or freezer for up to 3 months.
