Perfect Summer Pasta Salad.
Who remembers the song of the summer from their favorite summer ever? I mean I do and my millenials. I know you do too.
So for my millenials especially that nodded their head yes to that question, this is the adult version of the song of the summer. IT’S THE SALAD OF THE SUMMER BABY!
And just like that song, it is guaranteed to be on repeat in your home this summer.
Not only is it super simple, literally barely requiring any cooking, it packs so much flavor and so much nutrient density.
When it comes to food freedom and mindful eating, we do not forget nutrient density, but flavor comes first. And when those two things go hand in hand - MAGIC HAPPENS. And that by the way, is the magic we create over here at HSH.
Now, let’s quickly discuss the nutrients that are in this meal.
This meal is a perfect representation of our guideline of three. The guideline of three is something we use to help you create delicious, balanced meals. It asks you to fil that plate or bowl, with three food groups and three colors - minimum.
This meal has: protein, carbs and many colors that happen to be fruits and veggies and it has fat too.
It packs so many flavors AND like every one of the recipes we share, it is totally customizable to your needs.
Don’t like feta? No biggie, try mozz or goat cheese! Not a strawberry fan? Totally cool, this would be DELISH with watermelon or pineapple or even a nectarine - wow I need to try all combos!

Ok, so to get to the good part. I must tell you, I did not measure any of these ingredients but I am going to share my ingredients and a rough idea of some of the components with you. I am also going to share the video I made below that shows you literally what I did to make it.
This recipe pairs perfectly with any grilled protein. Think: chicken, turkey burgers, shrimp and more! So try it with each and please let me know your fave!

INGREDIENTS:
1 Box bean based (or not) pasta, cooked and cooled
1/2 bag romaine lettuce mix
1 cup chopped tomatoes (I love the new Honey Bomb variety)
1-2 chopped mini cucumbers
1/4 chopped red onion
Chopped green onion, your call how many
1 cup or more, chopped strawberries
Grated carrots
1/2 cup ish of kalamata olives
1/2-1 sliced avocado
Feta cheese - final step and use as much as you want!
RECOMMENDATIONS:
I chopped all my fruits and veggies up first and added to a bowl and gave a good mix
Once pasta is cooked and cooled, mix with the romaine lettuce and then add your bowl of veggies on top, and mix really well
Then add your feta or cheese of choice and the grilled protein you decide on!
Then top with the dressing (listed below)
Tasted even better as leftovers the next day so maybe dress and let sit in the fridge for a little before serving for a party!
DRESSING:
EVOO (put in jar first)
Fresh garlic
Balsamic vinegar - add a little more balsamic than EVOO
1/2 orange squeezed in
1 tbsp kewpie mayo
1 tbsp honey
salt and pepper
oregano
SHAKE IT UP and pour it out!
