Perfect Spring Pasta Salad

 

You absolutely NEED to try this pasta salad! This is a dupe of a pasta salad I had from the salad bar at Whole Foods. They haven’t had it since that day and I CANNOT stop thinking about it. It’s absolutely my meal fixation, and once you try it, you’ll understand why. It’s the perfect salad to make in bulk to feed a group of people or to feed yourself or your family for the week.

We love easy meal prep that’s delicious! Play around with the ratio of the ingredients to make it exactly what you want! 


Ingredients:

1 cup chopped zucchini

¼ c cup black olives

1 cup chopped artichokes

½ cup sun-dried tomatoes

⅓ cup shredded carrots

1 teaspoon pepper

1 teaspoon crushed red pepper flakes

1/2 teaspoon Italian seasoning

¼-⅓ cup Feta Cheese

4-5 ounces lemon Garlic Dressing (or any other Italian or Mediterranean dressing)

1 tablespoon honey

16 ounces Bowtie Pasta


Directions:

  1. Boil water and cook bowtie pasta according to instructions. 

  2. Add chopped zucchini, black olives, sun-dried tomatoes, chopped artichokes, shredded carrots seasoned with pepper, crushed red pepper flakes, and Italian seasoning to a large mixing bowl. 

  3. Add feta cheese and mix.

  4.  Pour pasta into a mixing bowl

  5. Add dressing and a small amount of honey and combine. 

  6. Optional: add protein such as sausage, pepperoni, or air-fried or grilled chicken.
