Mint Chocolatey Monster Cookies

These cookies pack so many nutritious benefits that will serve me well postpartum and if breastfeeding is in the cards, but also are amazing for today whether you are pregnant or not! They are an amazing snack, sweet treat, part of a meal or really any time of day option. You could even make them again with some added protein powder to really be more of a breakfast cookie too!

Wet ingredients:
1 cup creamy or chunky peanut butter
2 tablespoon melted butter or coconut oil
About 1/2 cup honey
2 eggs
1 teaspoon vanilla extract

Dry ingredients:
1 cup gluten free old fashioned rolled oats
1/2 teaspoon baking soda
¼ cup flax or chia seeds

For the mix ins:
1/2 cup or more (you decide!) Hu No Added Sugar Chocolate Chips
1 bar of your favorite Hu variety, chopped to add on top!
¼ cup pumpkin seeds or any nut or seed you like
¼ cup shredded coconut, finely
Flaky sea salt to top

Directions:
Preheat oven to 350 degrees F.
mix together the wet ingredients until smooth
Next stir in all dry ingredients and mix ins!
Place cookies on parchment lined baking sheet
Bake for 10-15 mins (check on them!!!) - I did 10 mins!
Then let sit out and cool for at least 30 mins before eating, they will harden and become perfect.
Cool completely before storing in freezer if you are freezing!
