Broccoli Crunch Salad

I was staring in the fridge today & realized that I had 4 bags of pre-cut broccoli in there & needed to use it ASAP. I don’t think it’s a secret that I am obsessed with broccoli, but I typically am so bored with it. I saute it, air-fry it or steam it. And I ALWAYS buy it {auto-pilot purchase at the store}. I clearly didn’t realize this time that I had so much back stock of it 🙆🏻‍♀️

Anyways - I needed to make something new. But instead of something NEW NEW I improved something old. And omg…it's ridiculous. No need to waste more of your time with more words. Just try it.

INGREDIENTS:

Serves 4.

  • 1 bag pre-cut broccoli florets 

  • 6 slices cooked chicken bacon 

  • 1/2 cup Siggi’s 4% plain yogurt (I used the Plain with touch of honey )

  • 2 tbsp Tessemae’s Lemon dressing

  • 3 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1/4 cup sunflower seeds

  • 1 apple chopped up (I used honeycrisp)

  • 1 cucumber diced up

  • 1/4 cup blue cheese crumbles

DIRECTIONS:

  1. Pour pre cut broccoli into a medium bowl while you cook your chicken bacon.

  2. Dice your cucumber & apple up to the size and shapes that make you happiest.

  3. In a separate smaller bowl (note: I didn’t do this LOL I just mixed everything in with the veggies, but I realized I should have made the dressing separate and it would be even better so I am recommending it to you!) add your yogurt, then mix in vinegar, dressing and honey. Mix well until fully combined.

  4. When the bacon is finished & crispy, add to the veggies.

  5. Cover the salad with the yogurt dressing & top with sunflower seeds & blue cheese crumbles.

  6. Eat with any protein option you like & ENJOY!!!!!
