Sheet Pan Quesadillas

Looking for a quick, satisfying meal after a long day? Look no further! 


Weeknight dinners don’t have to be time consuming or stressful! These quesadillas come together in a snap, and the possibilities for toppings are endless! Shredded lettuce, diced tomatoes, and sour cream would all be tasty, nutritious add-ons to this delicious meal. 


Ingredients:

¼ cup refried black beans

4 whole grain tortillas 

1 cup grilled, diced chicken breast

½ cup Mexican-style shredded cheese

½ cup sliced bell pepper

Guacamole (optional)


Directions:

  1. Preheat the oven to 475 Fahrenheit.

  2. Cover a baking sheet with aluminum foil.

  3. Lay the tortillas on the baking sheet.

  4. Spread the refried beans on one side of each tortilla

  5. Evenly divide the chicken breast, shredded cheese, and bell pepper and add them to one side of each tortilla.

  6. Fold the quesadillas in half and bake at 425 for 8 minutes. Flip and bake for an additional 8 minutes. Serve with guac if desired.

  7. Enjoy!
