Glazed Lemon Poppy Seed Donuts

Spring is in full force so what does that mean? Lemon EVERYTHING.



These donuts are fluffy, delicious, AND don’t require frying (which can be SUCH a hassle at home!). If you’re looking for a sweet accompaniment to your next meal or snack, look no further. 



Lemon Poppy Seed Donuts

Ingredients:

  • 1 cup flour

  • ½ cup granulated sugar

  • ¼ teaspoon baking powder

  • ¾ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 egg

  • ½ cup milk

  • 2 tablespoons of olive oil

  • 2 teaspoons of fresh lemon juice

  • 2 teaspoons grated lemon zest

  • 2 tablespoons of poppy seeds



For the glaze: 

  • ½ cup powdered sugar

  • 1 tablespoon lemon juice

  • 3 tablespoons milk

  • 1 teaspoon vanilla



Steps:

  1. Preheat to 400F. 

  2. Spray a donut pan with nonstick cooking spray of choice. 

  3. Mix together flour, sugar, baking powder, baking soda, salt, and poppy seeds. Next add in the egg, milk, oil, lemon juice, and zest. Mix all together with a whisk. 

  4. Place batter evenly into the donut pan and bake for 8-10 minutes. 

  5. Whisk together ingredients for the lemon glaze and pour on top of donuts once cooled!

  6. Enjoy!!!
