Prosciutto Pasta Salad Recipe

Roasted Red Pepper, Parmesan, & Prosciutto Pasta Salad

We are quickly approaching pasta salad szn, so add this delicious and satisfying pasta salad to your spring and summer bbq menu! You could also make this without pasta for a veggie side that everyone is guaranteed to love. I made this as a meal and added chicken meatballs as my protein. 

Optional add ons include: olives, oregano, pepperoncini.

Ingredients: 

  • 1-2 oz Prosciutto 

  • 1/4 cup diced Roasted Red Pepper

  • 1 head chopped romaine lettuce

  • 3/4 cup chopped cucumber

  • 1/3 cup diced red onion

  • 6 chopped basil leaves

  • 2 chopped small tomatoes 

  • 1/3-1/2 cup grated  parmesan cheese 

  • Pasta of choice - Banza is a nice option for more protein!

Note: The amounts of these ingredients are suggestions! You can make this however you want :) 

Dressing: 

  • Red wine vinegar

  • Avocado oil (or olive oil)

  • Salt

  • Pepper

  • Garlic Powder

** add according to your taste. 

Directions:

  1. Make pasta according to package. 

  2. While pasta is cooking, add all your ingredients (minus dressing ingredients) to a large bowl. 

  3. Once pasta is complete, cool if desired, and add to the bowl with the other ingredients. 

  4. Add dressing ingredients to your taste, I would start with a drizzle of red wine vinegar and oil, and then add from there. Then add spices to taste.
