Pumpkin πŸŽƒ {hidden veggie} Donuts 🍩


So the day I made this recipe, I made 3 different pumpkin dishes and realized I totally am...basic πŸŽƒ and I don’t care because do you know how good pumpkin is for you?! Truly though its benefits are incredible. Check out some of the reasons why I am LOVING adding pumpkin to everything {already} this fall  πŸ‚ and why you should too. And after you read it I will give you this insane recipe for high fiber pumpkin {zucchini} chocolate donuts πŸ˜‹

Health Benefits of Pumpkin {shape.com}



  • 1 cup Poop like a Champion Cereal - ground in blender to flour

  • 2 scoops F-Factor 20/20 protein powder (vanilla)

  • 1/2 cup pure pumpkin puree

  • 1 small zucchini

  • 1/4 cup coconut water

  • 1 tsp baking powder

  • 1 tsp vanilla

  • 1 tbsp golden milk powder (Gaia Herbs brand available on my amazon store )

  • 1 egg

  • 1/4 cup unsweetened vanilla coconut milk

  • Pumpkin pie spice

  • 1 tbsp coconut oil, melted
  • 1 tbsp coconut butter, melted (I used eating evolved)

For Chocolate Drizzle:

  • 2 tbsp lily’s chocolate chips

  • 2 tbsp coconut milk


  1. Pre-heat oven to 350.

  2. Place 1 cup cereal in a blender and grind down to flour. Dump into bowl. Add in protein powder, spices, baking powder.

  3. Add small zucchini to blender with coconut water & blend down. It may be a little chunky still - that’s ok! UNLESS you are trying to really hide the green then blend until its more liquid-y.

  4. Add in wet ingredients to dry bowl. Zucchini, pumpkin, vanilla, egg, coconut oil, coconut butter, coconut milk.

  5. Mix until combined thoroughly.

  6. Pour into greased donut pan (i used heart shaped one!) - make 12.

  7. Bake at 350 for 15 minutes (until you can pull fork out clean!)

  8. Once cooled - in a microwave safe dish add chocolate chips and milk, microwave for 30 seconds pull out and mix. Put back in and microwave 10 more seconds as needed until melted. May also do this on the stove! Drizzle over donuts 😍

FYI these are high in fiber, make sure that water intake is STRONG πŸ’ͺπŸ’¦
