I feel like this picture speaks for itself. I mean how do you not want to try this?! 

This dish was inspired by the #BanzaPlusPlants contest - where Banza has asked us to create a vegan dish featuring their amazing noodles as the base of the meal. I am not a vegan or vegetarian per se BUT I think we all know the true appreciation I have for plants & there is certainly something to be said for having a meatless meal in your weekly rotation. This dish still packs protein from the pasta itself + sunflower seeds & nutritional yeast (which if you don't know already, is an excellent source of Vitamin B12 & plant based protein - amazing for not only vegetarians & vegans but all of us!!!) With summer FINALLY right around the corner, this dish is super light, was amazing as a cold pasta salad but also could totally eat it warm - and has some fresh delish summer flavors to it (basil + lemon just scream summer to me!) 

Ingredients were super simple & as always you can customize it to fit your needs and preferences! 

Also - for those unfamiliar with nutritional yeast as an ingredient - this post from Whole Foods does a good job explaining why it is such a power house!! Click HERE. The flavor is slightly nutty/cheesy - and in this recipe I used it to replace the "cheese" in the pesto style sauce! My sauce is creamy looking and cheesy tasting without cheese or cream & this little powerful ingredient has a lot to do with that! I used Bob's Red Mill brand, but also have used Bragg's as well! TRY IT! And let me know your thoughts! 


Lemon Basil Banza:  


  • Juice of 1/2 lemon
  • 1/2 cup or more basil leaves
  • 1 tsp avocado oil (I used Primal Kitchen)
  • 1/3 ripe avocado
  • ~1/4 cup (or more) water
  • Garlic to preference
  • 1/4 cup nutritional yeast
  • 1 tsp (or MORE!) hot sauce
  • 1 tsp pure maple syrup (or Sukrin Fiber Syrup!) 

(Note: should make at least 3-4 servings) 


  1. Place all ingredients in a food processor or high power blender & blend until combined. 
  2. Spoon sauce over a portion of Banza and allllll the veggies you love. Top with 1 tbsp sunflower seeds for some crunch, added protein and a little fun!

In my dish - I had my banza cold and over a large portion of baby kale leaves. Topped with sliced grape tomatoes & some red pepper flakes were added on top too because I love the spice!
