Beet x Bean Muffins {Valentine's Theme Continues!}

Continuing on with that heart health theme for Valentine's week - and what better heart healthy food to focus on than...BEANS

Jam packed with fiber. Versatile. Crowd pleasers really. 

And when mixed with beets, which we have already learned are so good for our heart...

...and give recipes the prettiest color, plus dark chocolate (antioxidant rich!) & GG crackers for even more fiber - our hearts & bellies get real happy all over again. 

These are so simple. A fabulous snack & another DELISH way to take care of your heart! 






  • 1 15 oz. can chickpeas, drained and rinsed (OR Cannelloni beans - which I used because I realized too late I didnt have chickpeas - but intentions were to use chickpeas HOWEVER both work)
  • 6 GG crackers
  • ½ cup peanut butter
  • 3/4 cup shredded beets
  • 1/4 cup lily's chocolate chips
  • 2 tbsp honey
  • 2 tbsp Sukrin fiber syrup
  • 2 tsp vanilla
  • pinch of salt & pinch of cinnamon
  • 1/2 tsp baking powder
  • 1/4 cup milk option (I used rebbl) 


  1. Preheat oven to 350 degrees. Spray a muffin tin with cooking spray (I used ghee spray)
  2. Grind down GG crackers solo first & pour into bowl
  3. Back to the blender or food processor - add beets & 2 tbsp milk option, blend until combined and pour into bowl with GG flour.
  4. Next in the blender add beans, nut butter, 2 tbsp milk choice, honey, syrup, vanilla & mix until combined
  5. Pour into bowl & mix really well - add in salt, baking powder, cinnamon & chocolate chips - combine
  6. Pour batter into the muffin tins and bake for 20-30 minutes or until a toothpick comes out clean.
  7. Let cool completely. This is so important so they stay together - they are a little mushier to begin with so be patient here! You could try adding an egg to keep them together more if desired BUT just know they may crumble a little easier than a typical "muffin" - would make GREAT "granola" into a yogurt all broken up!
