Chocolate Chip x Fiber {& KALE} Brownie Bites

A muffin tray really saves the day again. What an easy way to portion control all these delicious foods! From apps to desserts - they take out a lot of the guess work and have made my life real easy these past few weeks. 


When a desert type food includes veggies, fruits and a TON of fiber, is it even a dessert anymore? I'd prefer to call it a snack that is jam packed with so many healthy foods but that also totally does the trick to take away your sweet tooth at night. These little "brownies" check in with about 7g of protein & 6g of fiber per little power pellet : ) - roughly 120 calories each - they are good any time of day, and with their dark chocolatey color, unless you tell someone the recipe - they won't know there is kale in there.

  • 1 banana, ripe
  • ~2 cups chopped kale
  • ½ avocado
  • ½ cup Rebbl chocolate reishi drink OR any milk of choice
  • 4 ground GG crackers
  • 1 cup Poop Like a Champion cereal, ground
  • 2 eggs
  • 4 scoops Vital Proteins Collagen Peptides, Dark Chocolate & Blackberry (any flavor will work, or unflavored - if you use unflavored though add in ~1/4 cup unsweetened cocoa powder) 
  • 2 tbsp fiber syrup or honey
  • ½ cup chocolate PB fit (or any peanut powder) 
  • ½ cup Lily’s dark chocolate chips
  • cooking spray


  1. Pre-heat oven to 350 degrees
  2. In a blender add - 4 GG crackers + 1 cup fiber cereal + PB Fit & protein powder, blend until flour like consistency achieved
  3. Pour flour in a bowl and set aside
  4. In a blender add: banana, avocado, kale & Rebbl - blend until combined
  5. Add veggie/fruit mixture into flour mixture
  6. Add 2 eggs & honey - mix well
  7. Fold in chocolate chips
  8. Use cooking spray to grease a 12 cup muffin tray
  9. Scoop batter evenly between 12 muffin cups
  10. Bake for 30 minutes
