Sweet Potato Pancakes {kinda sorta latkes}.


Happy Hanukkah!!

With a holiday that is focused around oil, sometimes it can be hard to find healthy ways to enjoy the traditional eats. A traditional potato pancake, or latke is essentially a fried (delicious) shredded potato. Don't get me wrong, this time of year, once a year, you should enjoy these traditions. BUT a taste will do :) and then try these lightened up versions to finish the meal. 

Considering they have basically no oil, your Jewish grandmother (or mother) may not approve - but I am totally bringing them to our Hanukkah celebrations anyways, fam get ready!! - BUT they are so easy, so yummy, and super healthy. So give them a try and see what happens!!

(Also, if you do not celebrate Hanukkah - these are an awesome side dish for any meal! OR a great "bun" for your next burger!) 




  • 2 cups spiralized sweet potatoes (NOTE: I am lazy and purchased the pre-spiraled sweets from Whole Foods - spiralizing yourself, I would use about 1 large or 2 medium sweet potatoes for this) 
  • 2 eggs
  • 2 tbsp flax seed 
  • 1/2 diced onion
  • Garlic, salt, pepper 


  1. On a hot pan with a little garlic, saute diced onions until browned
  2. While onions cooking, in a bowl add spiralized sweet potato, eggs, flax and seasoning
  3. Once onions cooked through, mix in with sweet potato mixture - combine ingredients
  4. Heat a pan and spray with non-stick cooking spray
  5. Add about 1/4 cup (ish) of mixture on to pan - can do 4 at a time if your pan is big enough!
  6. Use a spatula to flatten as the pancakes cook
  7. Flip after a few minutes (once bottom side is browned!) 
  8. Finish cooking on second side.
  9. Take off heat and top with apple sauce or plain Greek yogurt (instead of sour cream!) for traditional toppings OR like I said above, if you are not celebrating Hanukkah and just want a kick ass side dish, or "bun" for a burger - these are AWESOME. AND SO EASY!!!! 

Recipe should make 6 pancakes.
